Heriot Toun's elderflower lemonade

 

Plucked from our magical wee Elder tree at Heriot Toun:
 

When they've freshly bloomed, fill a basket full of elderflowers - about a couple of litres (or four pints in old money) and combine with the same amount of water. Add a juicy sliced lemon, a tablespoon of cider vinegar and about 300g of sugar. Give it all a good stir and after 24 hours or so strain and simmer for 15minutes. Cool a bit, bottle, chill and enjoy.
